These cookies & cream ice pops are made with 5 ingredients and can be made gluten free if you buy the Glutino brand Chocolate Vanilla Cream Cookies .
We wanted to make our own gluten free version of cookies and cream ice pops so Grady & Kyle could enjoy them. These ice pops are soft and creamy and taste gourmet. Go ahead, make some and sell them for $5 a piece on the street corner. Or you could just eat them all yourself.

Cookies and Cream Ice Pops

Ingredients
- 1 cup Heavy Whipping Cream
- 3 tablespoons Sugar
- 1 teaspoon Real Vanilla Extract
- 1/2 cup Whole Milk
- 12 Chocolate Sandwich type cookies (We used Glutino brand for gluten free ice pops)

These cookies and cream ice pops are soft and ice creamy, and perfect for a creamy, dreamy summer day. Easy to make and healthier than the store bought kind, with a gluten free option!
Directions
Step 1 | |
Crush the cookies into small chunks using a plastic bag and a mallet or rolling pin. You don't want them to be too fine. | |
Step 2 | |
Whip heavy cream until medium-soft peaks form. | |
Step 3 | |
Fold in vanilla, sugar, and milk until well combined. | |
Step 4 | |
Fold in cookie crumbs until just combined. | |
Step 5 | |
Put mix into piping bag or plastic bag with one end snipped off, then fill popsicle molds full of ice pop mixture. Tap the molds on the counter to remove any bubbles, then top the pops off and place sticks in them. | |
Step 6 | |
Freeze overnight or for at least 6 hours. |
